Spicy and Sweet Army Stew Stir-fry

I was thinking of making army stew, but I wasn’t really in the mood for soup, so I decided to stir-fry it instead. Since it’s a stir-fry, I thought the seasoning needed to be different from army stew, so I seasoned it with gochujang and stir-fried it. Adding minced pork was a stroke of genius^^ The taste is truly astonishing!!! A true rice thief!!!

Main Ingredients

  • Vienna sausages 500g
  • Spam (large can) 1
  • Minced pork 250g
  • King oyster mushrooms 2
  • Onion 1
  • Green onions to taste (approx. 100g)
  • Garlic 5 cloves
  • Joraengi tteok (snail-shaped rice cakes) to taste (approx. 200g)
  • Cheongyang chili peppers 2-3
  • Red chili pepper 1

Seasoning Sauce

  • Gochujang (Korean chili paste) 4 Tbsp
  • Gochugaru (Korean chili flakes) 4 Tbsp
  • Soy sauce 8 Tbsp
  • Sugar 1 Tbsp
  • Corn syrup 1 Tbsp
  • Minced garlic 2 Tbsp
  • Sesame oil 2 Tbsp
  • Sesame seeds 2 Tbsp
  • Black pepper to taste

Cooking Instructions

First, prepare the vegetables. Slice the onion into thick strips, and cut the king oyster mushrooms into bite-sized pieces. Slice the green onions diagonally, and thinly slice the cheongyang and red chili peppers after removing the seeds. (You can adjust the size of the vegetables to your liking.)

Cut the sausages and Spam into manageable pieces. If you add whole Vienna sausages, they will take longer to cook, so it’s best to halve them. Cut the Spam into bite-sized cubes as well.

For a chewier texture, lightly blanch the joraengi tteok in boiling water, then rinse under cold water and drain. This will help prevent them from sticking together when stir-frying.

Now, let’s make the delicious seasoning sauce. In a bowl, combine gochujang, gochugaru, soy sauce, sugar, corn syrup, minced garlic, sesame oil, sesame seeds, and black pepper. Mix well. (The ratio of seasonings provided is a basic guideline; you can adjust the amount of soy sauce or sugar according to your preference. Since minced pork is included, make sure to have a slightly generous amount of sauce.)

In a large bowl, add the sliced sausages, Spam, king oyster mushrooms, onion, green onions, chili peppers, blanched joraengi tteok, and the prepared minced pork. Pour the seasoning sauce over everything and mix well with your hands or a spatula until all ingredients are evenly coated with the sauce. This ‘massaging’ step helps the flavors meld beautifully.

Heat a pan over medium-high heat with a suitable amount of cooking oil. Add all the marinated ingredients to the pan and begin to stir-fry over high heat.

After stir-frying for about 1-2 minutes, when you notice that the pan is almost dry, add about one cup (200ml) of water. Continue to cook, allowing the sauce to reduce and thicken while coating the ingredients.

Once the liquid has reduced by about half, add the udon noodles and continue to cook until the noodles are tender and have absorbed the delicious sauce. The noodles will soak up the flavors wonderfully!

Finally, for an extra kick and aroma, you can add some fresh cheongyang peppers or green onions, and drizzle a little sesame oil over the top. This completes your incredibly flavorful army stew stir-fry.
