  • 200g cream cheese (at room temperature)
  • 2 eggs (at room temperature)
  • 50ml butter (melted)
  • 50ml milk (at room temperature)
  • About 50g organic walnuts (roughly chopped)

First, we’ll work on the base, which is crucial for the cake’s texture. For cream cheese, feel free to adjust the amount or omit it based on your preference. In a bowl, use a whisk to cream the softened butter until smooth. Then, add the room-temperature cream cheese and whisk again until well combined. Typically, eggs should be added in 2-3 installments to prevent separation, but today we’re keeping it simple! We’ll add all the ingredients at once and whisk vigorously.

When you mix all ingredients at once, the batter might look slightly separated at times. Don’t worry! The key is to combine everything until it forms a smooth, creamy consistency. Proceed to the next step without concern. This step helps ensure a moist and tender pound cake.

Today, we’re using a convenient commercial muffin mix for a quick and easy preparation. If you weren’t using a muffin mix, you would need to combine cake flour, salt, baking powder, and vanilla extract yourself. When using a muffin mix, it’s best to sift the dry ingredients once to ensure a lump-free, smooth batter. Sift it thoroughly.

Now, it’s time to add the organic walnuts for a rich texture and nutty flavor. Feel free to add other ingredients like raisins, dried cranberries, or chocolate chips for more variety in taste and texture. Fold your chosen additions into the batter and mix until evenly distributed.
