Spicy and Sweet Jjolmyeon Sauce
Chewy Noodle Dish: Toss and Enjoy with Jjolmyeon Sauce!
I usually buy pre-made Jjolmyeon sauce and noodles separately, but one day, on a whim, I bought only the noodles! I realized then that I could make the sauce myself using ingredients I already had at home. This recipe is for those spontaneous moments when you crave Jjolmyeon but only have the noodles.

- Carrot
- Lettuce
- Cucumber
- Cabbage
- Hard-boiled egg

- 0.5 Tbsp Minced garlic

- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1.5 Tbsp Oligodang (corn syrup)
- 1 Tbsp Sesame oil
- 1 Tbsp Vinegar
- 0.5 Tbsp Minced garlic
- Pinch of sesame seeds
Cooking Instructions
Step 1
First, let’s make the sauce that will define the taste of your Jjolmyeon. In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of gochugaru, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, 1.5 tablespoons of oligodang, 1 tablespoon of sesame oil, 0.5 tablespoon of minced garlic, and a pinch of sesame seeds. While precise measurements are helpful, this recipe was created based on my personal taste, so the key is to taste as you go and adjust the sweetness, sourness, and spiciness to your liking. Feel free to add more of any ingredient until it perfectly matches your palate!
Step 2
Since this sauce is made spontaneously, recreating the exact same taste might be a challenge. But don’t worry! Trust your taste buds and channel the memory of your favorite Jjolmyeon. With a mission to find ‘that’ unforgettable flavor, you’ll be able to craft a delicious sauce. Think of it as a flavor quest!
Step 3
Now, it’s time to prepare the Jjolmyeon noodles. Jjolmyeon noodles often come clumped together, so gently separate them under running water. Loosening them beforehand will prevent the noodles from sticking together excessively when boiling.
Step 4
Bring a pot of water to a rolling boil. Add the prepared Jjolmyeon noodles and cook for about 3 minutes. Be careful not to overcook, as this will make the noodles mushy and diminish their chewy texture. Once cooked, drain the noodles in a colander. Immediately rinse them under cold running water, gently rubbing the noodles with your hands as you rinse. This step helps to firm up the noodles and enhance their delightfully chewy texture.
Step 5
Finally, let’s assemble your Jjolmyeon! Wash and thinly slice your chosen vegetables from the refrigerator. Place the cooked Jjolmyeon noodles in a large serving bowl. Arrange the thinly sliced cabbage, carrots, lettuce, blanched bean sprouts, sliced cucumber, and a halved hard-boiled egg attractively on top of the noodles. Spoon the delicious, spicy-sweet Jjolmyeon sauce generously over everything, and toss well to combine. Now you have a hearty and delicious bowl of Jjolmyeon, right in your own home!
