Cooking the Radish Rice

  • 4cm piece of radish
  • 1 cup rice
  • 1 sheet of dried kelp (about 10x10cm)
  • 1 cup water
  • A pinch of black sesame seeds (for garnish)

Making the Spicy Radish Salad

  • 5cm piece of radish
  • 3 Tbsp gochugaru (Korean chili powder)
  • 6 Tbsp vinegar
  • 3 Tbsp sugar
  • 3/4 tsp salt
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

First, rinse the rice thoroughly in clean water 2-3 times, then soak it for about 30 minutes. Soaking the rice will make the cooked rice more chewy and delicious.

Peel the radish for the radish rice and prepare a 4cm long piece. Then, julienne it into approximately 5mm thick strips. These julienned radishes will be used for the radish salad.

Dice the radish for the radish rice into cubes of about 1cm. They will cook down to a tender texture and add a savory flavor between the rice grains.

Now, let’s prepare to cook the rice. Place the well-soaked rice into a pot or rice cooker, and evenly arrange the diced radish (from step 2) on top.
