Hello everyone, it’s Henri’s sister! A few days ago, I saw a delicious-looking hand-pulled dough soup on a neighbor’s blog, and I’ve been craving it ever since. This morning, with no soup left, I decided it was the perfect time to make some. But then, a surprise! I discovered I was completely out of all-purpose flour. 😅 I didn’t feel like going out to buy more, but I remembered I had pancake mix in the pantry. I thought, ‘Pancake mix is just flour with some seasonings, right?’ So, with a determined spirit to have my soup, I decided to make hand-pulled dough soup using pancake mix. Let’s make this delicious and spicy gochujang hand-pulled dough soup without all-purpose flour!
Dough- Pancake mix 3 paper cups
Cooking Instructions
Step 1
First, let’s make the dough for the hand-pulled soup. Pour 3 paper cups of pancake mix into a zipper bag or a bowl.
Step 2
Add 1 paper cup of water to the 3 cups of pancake mix and start kneading. Adjust the amount of water based on the consistency of the pancake mix.
Step 3
Knead the dough with your hands until it forms a cohesive mass. You don’t need to make it perfectly smooth like you would for kalguksu (knife-cut noodles) or dumplings. Just ensure it comes together into a single lump!

Set the prepared dough aside for a moment.

Now, let’s make the soup base. Bring 2 bowls (about 1.2L) of water to a rolling boil in a pot. Once boiling, add a handful of dried anchovies (and optionally dried kelp for more flavor) to create a rich broth. (If you don’t have anchovies, you can use commercial broth packs like udon broth, Dasida, or Matna for a similar flavor profile.)

Once the broth has been steeped sufficiently, carefully remove and discard the anchovies and kelp.
Step 7
Peel the potato and cut it into bite-sized pieces, about 1.5-2cm squares.
Step 8
Add the cut potato pieces to the broth and bring it to a boil. Since potatoes take longer to cook, it’s best to add them first.
Step 9
When the potatoes are halfway cooked, it’s time to add the hand-pulled dough. Use a spoon or your fingers to tear off small pieces of the dough and drop them into the soup. I personally like my dough pieces to be a bit thicker for a chewier texture, so I made mine slightly chunky. Feel free to shape them to your preference!

As the dough pieces cook, they will float to the surface of the soup. If you were making plain hand-pulled soup, you would add green onions and soy sauce here. But today, we’re making gochujang soup!

For the gochujang soup, add about half a tablespoon of gochujang and stir well to dissolve it. You can adjust the amount of gochujang to control the spiciness.
Step 12
Add 1 tablespoon of soy sauce for soup. Taste the broth and adjust the seasoning with salt as needed. A pinch of pepper can also be added for extra flavor.

Finally, garnish generously with thinly sliced green onions. The fresh, slightly pungent aroma of the green onions will enhance the overall flavor of the soup.
