Easy Rice Pizza Recipe

Introducing a fantastic rice pizza recipe that uses leftover rice and bits of vegetables to create a wonderful snack. Kids absolutely love it because it’s like eating pizza!
Main Ingredients- 1 serving of leftover or warm rice (approx. 150-200g)
- 1 egg
- Small amount of red bell pepper (minced)
- Small amount of yellow bell pepper (minced)
- Small amount of onion (minced)
- 1 crab stick or imitation crab meat (shredded or minced)
- 1 Vienna sausage (thinly sliced)
- Generous amount of shredded mozzarella cheese (to taste)
Seasoning- 1 Tbsp ketchup
- 1 Tbsp ketchup
Cooking Instructions
Step 1
First, prepare the toppings for your pizza. Thinly slice the Vienna sausage, and finely mince the bell peppers and onion. Heat a non-stick pan over low heat (no oil needed). Add the prepared vegetables and sausage and sauté gently until the vegetables soften slightly, about 2-3 minutes. This process brings out their natural sweetness and prevents them from tasting raw under the cheese. The moisture from the vegetables is enough to cook them. Set aside to cool slightly.
Step 2
In a mixing bowl, place 1 serving of rice. Crack in 1 egg. Thoroughly mix the rice and egg together using a fork or spatula until well combined. Ensure each grain of rice is coated with the egg mixture. This will help the rice patty hold its shape and add a richer, softer texture when cooked.
Step 3
Lightly grease a preheated pan with a little cooking oil. Spread the egg-coated rice mixture into a flat, round pizza shape. Aim for a thickness that will cook through evenly. Cook over medium-low heat until the bottom is golden brown and slightly crispy. Carefully flip it over and cook the other side until golden brown as well.
Step 4
Once the rice base is golden brown on both sides, spread 1 tablespoon of ketchup evenly over the top. This acts as your pizza sauce, providing a tangy and slightly sweet flavor base that complements the rice.
Step 5
Arrange the sautéed vegetables and sliced sausage over the ketchup. Add the shredded crab meat as well for extra flavor and texture. Distribute the toppings evenly for a visually appealing pizza.
Step 6
Generously sprinkle shredded mozzarella cheese all over the toppings. Don’t be shy with the cheese – it will melt and bind everything together beautifully.
Step 7
Now, either place the pan in a preheated oven (around 180°C or 350°F) for 5-7 minutes, or cover the pan with a lid and cook over low heat for about 3-5 minutes, until the cheese is fully melted and bubbly. Your delicious homemade rice pizza is ready to enjoy!
