Rich Curry Broth Tteokbokki: A Rice-Soaking Delight
Tteokbokki with a Curry Broth so Delicious, You’ll Want to Mix Rice into It
We made a soupy tteokbokki using tteokguk tteok (rice cakes for soup). Adding two cubes of solid curry lent it a wonderful curry aroma and flavor. Once we tasted this curry broth tteokbokki, we knew we couldn’t resist mixing in some rice! It’s a delicious curry broth tteokbokki that’s just as delightful when enjoyed with rice mixed into the broth.
Main Ingredients- 1 Tbsp cooking oil
- 1 onion, thinly sliced
- 70g ground pork
- 2 cups tteokguk tteok (rice cakes for soup), rinsed
- 3 hard-boiled eggs
- 1/8 carrot, julienned
- 1 green onion, diagonally sliced
Cooking Instructions
Step 1
Heat 1 tablespoon of cooking oil in a deep pot over medium heat. Add the thinly sliced onion and sauté until translucent, allowing its natural sweetness to develop. You’ll notice a sweet aroma as the onions soften.
Step 2
Once the onions are lightly browned, add the 70g of ground pork. Break it up with your spoon and stir-fry until it’s completely cooked through and no longer pink. The rendered juices from the pork will add depth to the broth.
Step 3
When the pork is fully cooked, reduce the heat to low and add 2.5 tablespoons of fine gochugaru. Stir constantly for about 1 minute, just until fragrant, being careful not to burn the chili flakes. This step infuses the dish with a pleasant spicy aroma.
Step 4
Pour in 5 cups (about 600ml) of water. Add the 2 cups of rinsed tteokguk tteok, along with 2 tablespoons of sugar and 1 teaspoon of salt. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot, and bring it to a boil until the tteok is tender and chewy.
Step 5
Once the broth comes to a rolling boil, reduce the heat to medium-low. Now it’s time to add the curry flavor. Add the 2 cubes of solid curry (approximately 50g) and stir until it’s completely dissolved and well incorporated into the broth. The broth will thicken slightly and release a delicious curry fragrance.
Step 6
Finally, add the 3 peeled hard-boiled eggs, the julienned 1/8 carrot, and the diagonally sliced green onion. Let it simmer for another moment, allowing the vegetables to soften slightly and the green onion’s aroma to meld with the broth. Serve immediately while hot for the best flavor!
