Spicy Braised Mackerel with Dried Radish Greens (Siraegi Godeungeo Jorim)

Recently, I tried making a second ‘rice-thief’ dish: Siraegi Godeungeo Jorim! It’s a flavorful and hearty stew that perfectly complements rice.
Ingredients- 1 can Mackerel (drained, flesh only)
- 1 bunch Dried Radish Greens (Siraegi, pre-cooked)
- 2 Tbsp Minced Scallions
- 2 Tbsp Mirin (or Rice Wine)
- 2.5 Tbsp Doenjang (Korean Soybean Paste)
- 200ml Water
- 1/3 Tbsp Sugar
- 2 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1/4 tsp Ginger Powder
- Pinch of Black Pepper
- 1 Tbsp Gochugaru (Korean Chili Flakes)
Cooking Instructions
Step 1
Measurements are based on a standard Korean rice spoon (1 Tbsp ≈ 1 rice spoon).
Step 2
First, let’s season the dried radish greens. In a bowl, combine the Siraegi with 1 Tbsp Mirin, 1/4 tsp Ginger Powder, and a pinch of Black Pepper.
Step 3
Add 1/2 Tbsp Doenjang and 1/3 Tbsp Sugar to the bowl. Mix well by hand and let it sit for about 20 minutes to allow the flavors to meld.
Step 4
After 20 minutes, transfer the seasoned Siraegi to a pot. Add the drained mackerel flesh from the can. (Alternatively, you can use fresh mackerel fillets, cut into pieces.)
Step 5
Next, add 2 Tbsp Minced Scallions, 2 Tbsp Doenjang, 1 Tbsp Minced Garlic, and 1 Tbsp Mirin. Sprinkle in 1 Tbsp Gochugaru. Pour in 200ml of water and bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer until the flavors have melded and the sauce has thickened slightly. Finally, drizzle in 2 Tbsp Sesame Oil and stir gently while it simmers to finish.
Step 6
Your delicious Siraegi Godeungeo Jorim is ready! This dish is such a ‘rice thief’ – it makes you want to eat more rice with every bite. Enjoy!
