Refreshing Beef and Radish Soup
Cool and Refreshing Gyeongsang-style Beef and Radish Soup / Beef and Bean Sprout Soup: Perfect for the Humid Rainy Season!
Personally, I’m not a big fan of heavy, murky broths. How about refreshing your tired body and mind with a delicious beef and radish soup that you can enjoy every day without getting bored? I’ll show you a way to make it easily by compressing the steps as much as possible.
Ingredients- Beef (for soup) 300g
- Sesame oil 1 Tbsp
- Soy sauce for soup 1+3 Tbsp (4 Tbsp total)
- Korean radish 1/5 of a medium radish (approx. 200-300g)
- Gochugaru (Korean chili flakes) 1 Tbsp
- Water 0.9-1 L
- Bean sprouts 200g
- Minced garlic 1 Tbsp
- Green onion 1/2 stalk
Cooking Instructions
Step 1
Slice the Korean radish into thin, bite-sized pieces (about 0.5cm thick). In a bowl, toss the sliced radish with 1 Tbsp of gochugaru. Gently mix until the radish is evenly coated. This step helps the soup achieve a beautiful color and infuses the radish with flavor.
Step 2
Heat a pot over medium heat and add 1 Tbsp of sesame oil. Add the beef and 1 Tbsp of soup soy sauce. Stir-fry for about 1 minute until the beef is lightly browned. Searing the beef at this stage helps to seal in its flavor and remove any gamey odors.
Step 3
Add the radish coated in gochugaru to the pot with the beef. Continue to stir-fry together for another minute until the radish starts to turn slightly translucent. Cooking the radish with the beef at this stage allows the refreshing taste of the radish to meld with the beef, deepening the soup’s flavor.
Step 4
Pour in 0.9-1 L of water and bring to a boil over high heat. Once boiling, reduce the heat to medium. Add 1 Tbsp of minced garlic, the rinsed bean sprouts, and the diagonally sliced green onion. Cover the pot only halfway, allowing some steam to escape, and simmer for 8 minutes. It’s important not to cover the pot completely to prevent a fishy smell from the bean sprouts. Season with 3 Tbsp of soup soy sauce during this simmering time.
Step 5
After 8 minutes, taste the soup and adjust the seasoning as needed. If it’s not salty enough, you can add a little more soup soy sauce or a pinch of salt for a cleaner taste.
Step 6
