- 2 Tbsp minced garlic
- 4 Tbsp steak sauce
- 4 Tbsp tonkatsu sauce
- 2 Tbsp oyster sauce
- 2 Tbsp plum extract (maesilcheong)
- 2 Tbsp corn syrup (mulyeot)
- 2 Tbsp minced garlic
Cooking Instructions
Step 1
First, pat the pork neck dry with paper towels. Season generously on both sides with salt and black pepper. Let it marinate for about 30 minutes at room temperature to tenderize the meat and allow the flavors to penetrate.
Step 2
Peel and thinly slice the onion. These will be sautéed with the steak to add sweetness and depth of flavor.
Step 3
While the pork is marinating, prepare the delicious sauce. In a small bowl, combine all the sauce ingredients: steak sauce, tonkatsu sauce, oyster sauce, plum extract, corn syrup, and minced garlic.
Step 4
Mix the 4 Tbsp steak sauce, 4 Tbsp tonkatsu sauce, 2 Tbsp oyster sauce, 2 Tbsp plum extract, 2 Tbsp corn syrup, and 2 Tbsp minced garlic. Stir well until combined. Set this flavorful sauce aside.
Step 5
After marinating the pork neck for 30 minutes, you can bake it in the oven, but for a simpler approach, we’ll cook it in a frying pan. Heat a frying pan over medium heat, then add the pork neck.
Step 6
Reduce the heat to medium-low to prevent burning. Add a knob of butter to the pan along with the pork. The butter will melt and add a wonderful richness and aroma to the steak as it cooks.
Step 7
Sear the pork neck on both sides until it turns a beautiful golden brown. You want a nice crust to form for great flavor.
Step 8
When the pork is about 80% cooked through, pour the prepared sauce over the steak in the pan. Reduce the heat to low and let the sauce simmer and thicken, coating the meat. It’s important to add the sauce before the meat is fully cooked so it can absorb the flavor.
Step 9
Continue to cook, stirring occasionally, until the sauce has thickened and coats the steak nicely. Taste the sauce and adjust seasoning if needed. If it’s too salty, add a splash of water; if it’s too bland, simmer a bit longer. The finished steak is wonderfully savory and slightly sweet, and it pairs perfectly with the accompanying salad and other side dishes.
Step 10
Tada! Arrange the beautifully cooked pork neck steak on a plate. Serve it with a fresh salad, and perhaps a fried egg and some sausages for a visually appealing and delicious meal. It looks quite presentable, doesn’t it? Enjoy the tender, juicy steak with the flavorful sauce, balanced by the freshness of the salad. It’s incredibly delicious! It’s so satisfying to be able to make such a tasty steak at home so easily. I think I’ll be making this often from now on.
