Cooking Instructions
Step 1
Begin by thoroughly washing the fresh chicken under running water. If you purchased it from a market, it’s convenient to ask them to trim excess fat and make an incision in the belly. Carefully clean the inside of the chicken’s cavity, removing any blood or residual internal organs for a clear and clean broth. Place the cleaned chicken in a pot with its belly side facing up. Stuff the cavity with all the garlic cloves and ginseng roots. Pour in enough water to fully submerge the chicken.

Boil over high heat for about 15 minutes, then skim off any foam or impurities that rise to the surface. This step is crucial for achieving a clear and savory broth, as it removes the chicken’s fat and unwanted particles. After skimming, reduce the heat to medium and let it simmer for another 30 minutes. While you can serve and season individually, this recipe seasons it all at once. Add about half a tablespoon of salt (adjust to your preference) to the pot. Continue simmering.
