Main Ingredients

  • 250g fresh Usnea Lichen (Myeokchwi), cleaned and trimmed
  • 1/2 red chili pepper, seeds removed (for color and mild sweetness)
  • 1/2 Korean green chili pepper (Cheongyang pepper), seeds removed (for a clean spicy kick)

Seasoning

  • 1 Tbsp minced green onion (for a fresh aroma)
  • 1 Tbsp minced garlic (for enhanced flavor)
  • 1 tsp salt (to taste)
  • 1 Tbsp soup soy sauce (Gukganjang – for a deeper umami)
  • 1 Tbsp sesame oil (for nutty aroma and flavor)
  • 1/2 Tbsp toasted sesame seeds (for crunch and garnish)

First, prepare 250g of fresh Usnea Lichen (Myeokchwi). If the stems are tough, you can use only the tender parts, or blanch the tougher parts a little longer.

Bring a pot of water to a rolling boil and add 1/2 Tbsp of coarse salt. Blanch the Myeokchwi for just about 10 seconds, until it slightly wilts. Be careful not to overcook, as it can become mushy! Immediately transfer the blanched lichen to cold water and rinse 2-3 times to preserve its freshness. Gently squeeze out as much water as possible. This step is crucial to prevent the salad from becoming watery.

Finely mince half of the red chili pepper and half of the green chili pepper after removing the seeds. If you prefer a spicier taste, feel free to increase the amount of green chili pepper. Add the minced chili peppers, 1 Tbsp of minced green onion, 1 Tbsp of minced garlic, and 1 tsp of salt to the bowl with the squeezed Myeokchwi.

Now, add 1/2 Tbsp of toasted sesame seeds for a nutty flavor, 1 Tbsp of soup soy sauce (Gukganjang) to enhance the overall taste, and 1 Tbsp of sesame oil. Gently mix everything together with your hands, tossing gently to combine without breaking the lichen apart.
