Soft Tofu Stew (Sundubu Jjigae) Recipe
Easy and Quick Homemade Soft Tofu Stew
This is a simple and quick recipe for a delicious soft tofu stew, made with a single package of sundubu (Korean soft tofu) readily available at the supermarket. It’s a comforting and flavorful dish perfect for a quick and satisfying meal.
Main Ingredients- 1 package of Sundubu (Korean soft tofu, approx. 300-400g)
- 1/4 Onion
- 1/3 stalk of Green Onion
- 3 cloves Garlic, minced (approx. 1 Tbsp)
- 2 cups Kelp Stock or Anchovy-Kelp Stock (approx. 400ml)
- 1 Tbsp Cooking Oil
- 1 Tbsp Sesame Oil
- 2 Eggs
Seasoning and Flavoring- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Fish Sauce or Soy Sauce for soup
- Pinch of Salt (to taste)

Cooking Instructions
Step 1
Carefully open the package of soft tofu and place it in a sieve to drain excess water. Be gentle to avoid breaking the tofu too much.
Step 2
Peel and finely dice 1/4 onion. Chop the white and green parts of the green onion separately. Reserve a small amount of the chopped green onion for garnish. Mince the garlic cloves.
Step 3
Heat 1 Tbsp cooking oil and 1 Tbsp sesame oil in a pot over medium-low heat. Add the minced onion, minced garlic, and the chopped green onion (except for the garnish portion). Sauté until fragrant and the onion becomes translucent, stirring to prevent burning.
Step 4
Add 1 Tbsp Gochugaru to the pot and stir-fry for about 30 seconds over low heat. This step helps to deepen the color and flavor of the chili flakes without making them bitter. Ensure it doesn’t burn.
Step 5
Increase the heat to medium and pour in 2 cups of the prepared kelp stock. Bring the broth to a boil.
Step 6
Once the broth is boiling, carefully add the entire package of soft tofu, or break it into large chunks with a spoon, into the pot. Gently break up the tofu into bite-sized pieces with your spoon. Stir in 1 Tbsp of fish sauce (or soy sauce) and season with salt to taste. It’s best to start with less salt, as the stew may reduce and become saltier. Taste and adjust as needed.
Step 7
After the tofu and seasonings have simmered together, crack the 2 eggs directly into the stew. Let them cook gently for a moment. Reduce the heat to low and continue simmering until the eggs are cooked to your liking. The yolk doesn’t need to be fully cooked.
Step 8
Finally, sprinkle the reserved chopped green onion over the top as a garnish. Your delicious and comforting soft tofu stew is ready to be enjoyed hot!
