How to Make a ‘Beef Salad’ for Spring Diet: The Golden Ratio for Oriental Dressing!
This spring, we’re bringing you a ‘Spring Diet Beef Salad’! It’s said that eating lean cuts of meat is effective for dieting. This salad is perfect for a light and healthy meal to welcome the warmer season.
Salad Ingredients- 10 leaves Romaine lettuce
- 15 sprigs Chicory
- 200g Beef (for Shabu-Shabu)
- A little Onion (thinly sliced)
- A little Fruit cheese (cut into bite-sized pieces)
- A few Black olives
- A sprinkle of Parmesan cheese powder
Golden Ratio Oriental Dressing- 2 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- 2 Tbsp Mirin (rice wine)
- 2 Tbsp Olive oil
- 1 Tbsp Perilla oil
- 1 Tbsp Toasted sesame seeds
- 2 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- 2 Tbsp Mirin (rice wine)
- 2 Tbsp Olive oil
- 1 Tbsp Perilla oil
- 1 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
Prepare 10 leaves of fresh Romaine lettuce. Wash them thoroughly under running water and pat them dry.
Step 2
Similarly, wash 15 sprigs of chicory clean and set aside.
Step 3
Thinly slice about 1/4 of an onion. Place the washed Romaine, chicory, and sliced onion in ice water for about 5 minutes to enhance their crispiness. Drain well, ensuring excess water is removed.

Now, let’s make the delicious Oriental dressing. Pour 2 tablespoons of soy sauce into a bowl.

Add 1 tablespoon of minced garlic. The garlic aroma will enhance the overall flavor.

Add 2 tablespoons of vinegar for a refreshing tang.

Include 2 tablespoons of sugar to balance the flavors. You can adjust the sweetness to your preference.

Add 2 tablespoons of mirin (rice wine) to remove any gamey odors and add depth to the flavor.

Pour in 2 tablespoons of olive oil to enrich the salad dressing.

Add 1 tablespoon of perilla oil for a nutty, aromatic note. Its fragrance complements the salad beautifully.

Finally, add 1 tablespoon of toasted sesame seeds and whisk everything together until well combined. Your delicious Oriental dressing is ready!

Prepare 200g of beef for Shabu-Shabu. Gently pat dry any excess moisture with paper towels.

Heat a pan over medium heat. Spread the beef in a single layer and cook quickly, just until the surfaces are no longer pink. Be careful not to overcook, as it can become tough. Slice the cooked beef into bite-sized pieces.

Arrange the prepared Romaine lettuce, chicory, and onion attractively on a large plate. Generously top with the bite-sized fruit cheese.

Add the black olives and the flavorful cooked beef. Finish with a sprinkle of Parmesan cheese powder for a beautiful presentation of your beef salad!
