Pork Ribs Preparation- 2kg Pork ribs
- 2 Tbsp Doenjang (fermented soybean paste)
- 2 Tbsp Soju (Korean rice wine)

Cooking Instructions
Step 1
First, let’s prepare the ‘Spicy Sauce’ which is key to the flavor of these ribs. In a large bowl, combine gochugaru, minced garlic, minced ginger, soy sauce, beef dashida, maesilcheong, sugar, and soju. Mix them thoroughly.
Step 2
Once the sauce is well combined, cover it with plastic wrap and let it rest in the refrigerator for at least 30 minutes, or preferably overnight. Allowing the sauce to meld and mature will result in a much deeper flavor.
Step 3
Soak the pork ribs in cold water for over 30 minutes to remove any blood. Changing the water 2-3 times during this process will ensure a cleaner taste.
Step 4
Rinse the blood-soaked pork ribs thoroughly under cold running water. In a pot, add enough water to cover the ribs, dissolve 2 tablespoons of doenjang (fermented soybean paste), and 2 tablespoons of soju. This mixture will be used to parboil the ribs.
Step 5
Add the rinsed pork ribs to the pot, ensuring they are fully submerged in water. Bring to a boil over high heat and simmer for 40-50 minutes. Boiling with doenjang and soju effectively removes any gamey odor from the pork and imparts a subtle base seasoning.
Step 6
Drain the parboiled pork ribs and transfer them to a wide, shallow pan or pot.
Step 7
Generously pour the prepared ‘Spicy Sauce’ over the parboiled ribs. Put on disposable gloves and mix well, massaging the sauce into the ribs as if you were kneading dough. The marinated ribs will look incredibly appetizing!
Step 8
Pour 700ml of the prepared broth over the sauced pork ribs. (You can use store-bought broth or homemade anchovy-kelp broth.)
Step 9
Now, let’s start cooking. Bring to a boil over high heat, then add an additional 3 tablespoons of minced garlic and 3 tablespoons of gochugaru. Stir occasionally to prevent burning. Once the sauce has reduced slightly, cover the pot and continue to boil vigorously over high heat.
Step 10
Simmer over high heat for about 40 minutes, allowing the flavors to penetrate the ribs. Then, reduce the heat to medium and let the sauce thicken to a glaze. The ribs will start to turn a mouthwatering deep red.
Step 11
Slice the king oyster mushrooms into thick rounds and diagonally cut the scallion. Add the prepared mushrooms and scallions to the reduced ribs and continue to simmer over medium heat for another 5-10 minutes, stirring to coat them evenly with the sauce.
Step 12
Check if the pork rib meat is tender and soft, and if the king oyster mushrooms have absorbed the sauce well. Once all ingredients are harmoniously coated, the dish is almost ready.

A signature element of Daegu Dongin-dong spicy braised ribs is serving them in an aluminum pot! Transfer the finished spicy pork ribs to an aluminum pot to enhance the authentic experience.

Finally, rinse the bean sprouts and briefly blanch them in boiling water. Pile the blanched bean sprouts generously on top of the braised ribs. The bean sprouts are intentionally not seasoned separately. Mixing them with the spicy rib sauce and serving over rice will create an unforgettable, delicious fried rice.
