Muffin Batter Ingredients

  • 220g All-purpose flour (sifted)
  • 120g Unsalted butter (softened to room temperature)
  • 180g Granulated sugar
  • 2 Large eggs (room temperature)
  • 6g Baking powder
  • 2g Salt
  • 125g Milk (warmed slightly)
  • 50g Candied orange peel (finely chopped, pith removed)
  • A handful of chunk chocolate chips (optional, for topping)

Cooking Instructions

Begin by creaming the softened butter in a bowl until smooth. Add the granulated sugar and salt, and whip until well combined with the butter. In a separate small bowl, lightly beat the eggs. Gradually add the beaten eggs to the butter-sugar mixture in 2-3 additions, mixing well after each addition to prevent the batter from separating. Ensure you mix quickly to emulsify.

To further ensure the batter doesn’t separate, place the bowl over a bain-marie (a bowl of simmering water) and whisk gently. Once the mixture is smooth, add the sifted all-purpose flour and baking powder. Using a spatula, gently fold the dry ingredients into the wet ingredients using a cutting and folding motion (like a ‘#’), just until no dry streaks remain. Be careful not to overmix, as this can result in tough muffins.

Gently fold in the slightly warmed milk until just combined. Transfer the batter to a piping bag for easy filling. Line your muffin tin with paper liners. Fill each liner about 70% full with the batter. Sprinkle the chunk chocolate chips over the top of the batter for a decorative touch. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let them cool slightly before enjoying.
