  • 2 Tbsp oligosaccharide (30ml)

Cooking Instructions

Step 1

Let’s get started with this recipe for ‘Namyang Jjimdak,’ a delicious and nutritious braised chicken perfect for the whole family on a cold day.

Step 1

Step 2

First, to remove any gamey odors and ensure a clean flavor, bring 6 cups (about 1.2L) of water to a boil. Add the braising chicken and blanch for 5 minutes. This step is for removing impurities, not fully cooking the chicken, so be careful not to overcook it. After blanching, rinse the chicken thoroughly under cold water. Removing excess fat and blood will result in a clearer broth.

Step 2

Step 3

Now, let’s prepare the vegetables! Peel the potatoes and cut them into large, bite-sized cubes (about 2-3cm). Cut the carrot into similar-sized cubes. Roughly chop the onion or cut it into large pieces. Rehydrate the dried shiitake mushrooms in lukewarm water, trim the tough stems, and slice them into bite-sized pieces. Prepare the ginkgo nuts by shelling them.

Step 3

Step 4

In a deep pot or wok, add the rinsed chicken. Pour in all of the pre-mixed ‘Special Sauce for Namyang Jjimdak.’ This sauce is a blend of soy sauce, minced garlic, cooking wine, black pepper, sugar, and oligosaccharide. Toss the chicken to ensure it’s evenly coated with the sauce.

Step 4

Step 5

Add all the prepared vegetables to the sauced chicken. This includes the cubed potatoes, carrots, onions, and the rehydrated shiitake mushrooms. As these vegetables cook with the chicken, they will contribute their delicious flavors to the broth.

Step 5

Step 6

We’re almost there! Finally, add the coarsely chopped green onions and the nutty ginkgo nuts into the middle of the pot. Adding green onions towards the end enhances their fresh aroma, and ginkgo nuts add nutritional value.

Step 6

Step 7

Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to low and continue to simmer for another 20 minutes. It’s important to cook until the chicken and potatoes are completely tender and the flavors have melded well. If the sauce becomes too thick during cooking, you can add a little water.

Step 7

Step 8

Voilà! Your delicious Namyang Jjimdak is ready. Serve it over a hot bowl of rice for an even more satisfying meal. Enjoy this nutrient-packed braised chicken and share a warm moment with your family on a cold day!
