Main Ingredients

  • 1 head of aged Kimchi (well-fermented)
  • 1 bowl of cooked rice (warm)
  • A pinch of Furikake (Japanese seasoned rice flakes)
  • 1/2 Tbsp cooking syrup (or sugar)
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp roasted sesame seeds
  • A sprinkle of black sesame seeds (for garnish)

Cooking Instructions

Step 1

First, rinse the aged Kimjang kimchi under running water to wash off the spicy seasoning. If it’s too spicy or sour, feel free to rinse it multiple times. Drain the kimchi thoroughly in a colander to remove excess water. Trim the tough core of the kimchi leaves or make small cuts into it. In a large bowl, combine the prepared kimchi, sesame oil, cooking syrup (or sugar), and roasted sesame seeds. Gently mix everything together with your hands until the kimchi is well-coated. For the rice, stir in the Furikake and mix gently with a spatula until evenly distributed. Shape the warm rice into bite-sized, flattened rounds.

Lay out a piece of the seasoned kimchi flat. Place one of the prepared rice balls onto the kimchi. Carefully roll the kimchi around the rice, tucking it in snugly to form a neat roll. Once your Kimchi Ssambap is formed, cut it into manageable portions, such as in half or into 2-3 pieces. Arrange them attractively on a plate. Finally, sprinkle a little black sesame seeds on top for garnish. Your visually appealing and delicious Kimchi Ssambap is now ready!
