They say rice cooked with radish is incredibly delicious, so I decided to make it with the radish I had in my fridge! This recipe transforms a humble radish into a flavorful and satisfying meal. The natural sweetness of the radish infuses the rice as it cooks, creating a delightful aroma and taste. Paired with the chewy texture of mushrooms, this simple radish rice is a perfect and healthy meal. Enjoy this easy-to-follow recipe for a comforting and delicious dish!
Main Ingredients- 1/2 Korean radish (approx. 300-400g after prep)
- 3 King oyster mushrooms (or 2-3 depending on size)
Special Seasoning Sauce- 1 cup soy sauce (200ml)
- 1 Tbsp sesame oil (15ml)
- 1 Tbsp sugar (15ml)
- 1 Tbsp minced garlic (15ml)
- 1.5 Tbsp gochugaru (Korean chili flakes) (22.5ml)
- 1 green onion (finely chopped)
- A pinch of toasted sesame seeds (for garnish)
- 1 cup soy sauce (200ml)
- 1 Tbsp sesame oil (15ml)
- 1 Tbsp sugar (15ml)
- 1 Tbsp minced garlic (15ml)
- 1.5 Tbsp gochugaru (Korean chili flakes) (22.5ml)
- 1 green onion (finely chopped)
- A pinch of toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the radish and king oyster mushrooms. Peel the radish and slice it thinly, about 0.5 cm thick, then cut it into long, matchstick-like strips about 5 cm long. Slice the king oyster mushrooms lengthwise to match the length of the radish strips for a pleasant texture when mixed with the rice.
Step 2
Rinse the rice thoroughly. It’s crucial to use about 10% less water than you normally would for cooking rice. This is because the radish will release moisture as it cooks, preventing the rice from becoming too mushy. Be sure to keep this in mind!
Step 3
Place the rinsed rice into your rice cooker. Then, evenly spread the julienned radish strips on top of the rice. This step allows the radish’s natural sweetness and aroma to permeate the rice grains.
Step 4
Next, arrange the sliced king oyster mushrooms attractively over the radish. Now, simply press the ‘Cook’ button on your rice cooker and wait for the delicious radish rice to be ready. Use the standard white rice cooking mode.
Step 5
While the rice is cooking, let’s make the special seasoning sauce! In a bowl, combine 1 cup of soy sauce, 1 tablespoon of minced garlic, 1 tablespoon of sugar, and 1 tablespoon of sesame oil. Add the finely chopped green onion generously for added fragrance.
Step 6
If you prefer a bit of spice, add 1.5 tablespoons of gochugaru (Korean chili flakes). This sauce alone will elevate the flavor of your radish rice significantly. Feel free to adjust the amount of soy sauce or sugar to your preference.

Finally, add a pinch of toasted sesame seeds. Mix everything together gently. This creates a delicious seasoning sauce with a wonderful nutty aroma. Let the flavors meld together while the rice is cooking.

Voilà! Your delicious radish rice is ready. Gently fluff the hot rice from the rice cooker with a spatula. You’ll be greeted by the wonderful aroma of sweet radish and the delightful chewiness of the mushrooms.
