I decided to air fry them for a perfectly crispy texture and create a homemade sauce to serve as our dinner! Accompanied by a simple cabbage salad with mayonnaise and ketchup, a few pieces of fruit, and rice, it’s a meal that doesn’t need any other side dishes and is just as satisfying as dining out. The secret weapon for that authentic “Yeongyangsik” restaurant taste is the homemade sauce, which is surprisingly easy to make! To enhance the depth of flavor beyond store-bought sauce, I simmered butter, ketchup, corn syrup, black pepper, and water. Just adding this homemade sauce made the pork cutlet taste significantly better! My recipe for this sauce serves two large pork cutlets and can also be used for steaks or “omurice.” Kids love it too, so it’s a fantastic option for a dinner menu when you’re short on side dish ideas! This recipe makes enough sauce for 2 large pork cutlets and can be a versatile sauce for steaks or omurice as well. Homemade “Yeongyangsik” Sauce Ingredients

  • 1 piece of butter (approx. 10g)
  • 6 Tbsp store-bought pork cutlet sauce (approx. 60ml)
  • 1 Tbsp ketchup (approx. 10ml)
  • 1 Tbsp corn syrup (approx. 10ml)
  • Pinch of black pepper
  • 60ml water

  • Frozen pork cutlets (as many as you like)
  • Cabbage (shredded finely, to taste)
  • Mayonnaise (for salad)
  • Ketchup (for salad)
  • Cherry tomatoes (for garnish or salad, as needed)
  • Cooked rice (1 serving)

Cooking Instructions

Step 1

First, let me share the best way to air fry frozen pork cutlets for that perfect crispiness. Using my air fryer as a guide, I cooked one cutlet at 180°C (356°F) for a total of 12 minutes. I started by cooking one side for about 6 minutes, then flipped it over and cooked the other side for another 6 minutes. (Please adjust the cooking time based on your specific air fryer model.)

Now, let’s make the special homemade sauce that will elevate your pork cutlets! In a small saucepan, combine 1 piece of butter, 6 tablespoons of store-bought pork cutlet sauce, 1 tablespoon of ketchup, 1 tablespoon of corn syrup, a pinch of black pepper, and 60ml of water. Place the saucepan over medium heat.

Using a spatula or spoon, stir the sauce ingredients continuously as they simmer gently over medium heat. Make sure everything is well combined and the sauce starts to bubble lightly.

Be careful not to overcook the sauce while trying to thicken it, as it can become too salty. It’s best to simmer it just until it reaches your desired consistency. A lightly flowing sauce is perfect!
