First, lightly rinse the dried shredded squid under cold water. This helps to remove any unnecessary additives and also makes the squid much softer and more tender. After rinsing, gently squeeze out excess water.

Prepare the dried shredded squid into bite-sized pieces. If any pieces feel too thick, tear them lengthwise into thinner strips. If they are too long, cut them into shorter pieces for easier eating, especially for children. For thicker squid, you can split them in half lengthwise before cutting.

Place the prepared dried shredded squid into a dry pan (do not preheat the pan) and stir-fry over low heat. This step helps to gently remove some moisture, preventing the squid from clumping together when sauced and allowing the seasoning to penetrate better. Stir-fry for about 1-2 minutes, being careful not to burn it.

Once the squid is slightly stir-fried, add 1 Tbsp of cooking oil and continue stir-frying. The oil will coat the squid, helping the sauce adhere well and adding a richer, nuttier flavor.

Add 1 Tbsp of soy sauce and 1 Tbsp of mirin (sweet rice wine) and quickly stir-fry with the dried shredded squid. It’s important to stir-fry until the soy sauce is evenly distributed throughout the squid.

Add 1/2 Tbsp of sugar and stir-fry together. (You can use either white or brown sugar.) If you prefer a sweeter taste, feel free to add a little more sugar. Adjust the sugar quantity to your preference. I used raw sugar, which provided a good level of sweetness even in a small amount.

Finally, add 1 Tbsp of oligosaccharide for a glossy finish. Oligosaccharide adds shine, but too much can make it sticky, so using the right amount is key. (1 Tbsp is sufficient for a nice sheen in this recipe.) Finish by adding 1/2 Tbsp of sesame oil and a generous sprinkle of sesame seeds (or whole sesame seeds) and mix well for a delicious soy sauce-braised dried shredded squid. Enjoy!

I only used 1 Tbsp of soy sauce, so while the color looks light, the taste was not too salty and perfectly seasoned. If you prefer a darker color and saltier taste, you can increase the soy sauce amount or add a little oyster sauce.

The resulting dish is a bit on the sweeter side, which made me momentarily miss the spicy and sweet flavor of gochujang-braised dried shredded squid. I’m thinking of making it spicy with gochujang next time. (You can also add a small amount of gochujang or ketchup to vary the flavor according to your preference.)

This sweet dried shredded squid is great as a snack, but it also makes a perfect side dish for rice. It’s incredibly simple and quick to make, so it’s a stress-free option even on busy days. It’s much easier than making gochujang-braised dried shredded squid, so sometimes enjoying this clean soy sauce-braised version makes for a delicious meal. Enjoy!
