  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Minced Garlic
  • A small amount of chopped Green Onion
  • 2 Tbsp Vinegar
  • A pinch of Salt
  • 1/2 Tbsp Sesame Seeds

Cooking Instructions

Start with a 150g packet of pre-peeled bellflower root (Doraji), which is about one and a half handfuls. Rinse the bellflower root thoroughly under cold running water. To enhance its texture and reduce any bitterness, rub it gently with a pinch of salt in your hands. This step is crucial for achieving a pleasant crunch.

Drain the rinsed bellflower root very well using a colander. Excess water can dilute the seasoning, so ensure it’s as dry as possible. In a mixing bowl, combine all the seasoning ingredients: Gochujang, Gochugaru, soy sauce, corn syrup, sugar, minced garlic, chopped green onion, vinegar, salt, and sesame seeds. Mix them together to create a well-blended seasoning paste.
