  • 1 Tbsp minced garlic
  • 1/2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soup soy sauce (ganjang) (adjust to taste)
  • 1/4 stalk green onion

Cooking Instructions

First, prepare the mallow. For fresh mallow, remove the tough stems and use only the tender parts. If the stems are fibrous, you can lightly peel them to make the soup even more tender.

Place the prepared mallow in a bowl, add a pinch of salt, and rub it vigorously. This process helps remove any bitterness and softens the mallow. Rinse it several times under clean water and then squeeze out excess moisture.

Pour the anchovy-kelp broth into a pot and dissolve the soybean paste. Mixing homemade and store-bought doenjang can create a richer flavor. If you prefer a clearer soup, you can strain the soybean paste through a sieve to remove the bean solids.
