Main Ingredients- 4 fresh abalones

Cooking Instructions
Step 1
Prepare 4 fresh abalones. Using a stiff brush or toothbrush, thoroughly scrub the dark surfaces of the abalone to remove any grit or impurities. Rinse them well under running water.
Step 2
Separate the abalone meat from the shell. Insert a spoon between the shell and the meat, using it as a lever to gently detach the meat. Remove the internal organs and carefully cut away the abalone’s mouth (beak) with a knife.
Step 3
Place the cleaned abalone meat on a cutting board. Using a sharp knife, score the abalone meat in a crosshatch pattern (diagonal cuts in both directions). This scoring helps the abalone absorb flavors better and creates a more tender texture when cooked.
Step 4
Heat a frying pan over medium heat and add about 1 Tbsp of butter, letting it melt. Once the butter is melted and fragrant, place the scored abalone in the pan. Sprinkle with 1 Tbsp of cooking wine and a pinch of salt. Gently stir the abalone with a spatula or chopsticks to ensure the butter and seasonings are well distributed, especially within the scored cuts.
Step 5
Flip the abalone over and baste the other side with the remaining butter in the pan. Cook for another 30 seconds over medium-low heat, then immediately turn off the heat. Be careful not to overcook, as this can make the abalone tough.
Step 6
Arrange the beautifully seared abalone on a serving plate. Finish with a light drizzle of fresh lemon juice to enhance the flavor and add a refreshing zest. Your delicious homemade abalone butter sear is now ready to be enjoyed!
