Sweet & Nutty Banana Flapjack

Ingredients- Rolled Oats 200g
- Self-Raising Flour 85g
- Dried Fruits 40g
- Chopped Nuts 25-40g
- Light Brown Sugar 70g
- Melted Butter 125g
- Golden Syrup 3 Tbsp
- 2 Mashed Ripe Bananas
- 1 Egg
- Cinnamon Powder 1/2 – 1 tsp
Cooking Instructions
Step 1
Before you begin, it’s helpful to do a little prep work. First, chop your nuts and dried fruits into bite-sized pieces – this makes them easier to incorporate. If you can’t find self-raising flour, don’t worry! You can make your own by mixing 85g of all-purpose flour with 1 tsp of baking powder. Lastly, preheat your oven to 160°C (320°F).
Step 2
In a large mixing bowl, combine the 200g of rolled oats, 85g of self-raising flour, 70g of light brown sugar, and 1 tsp of cinnamon powder. Stir these dry ingredients together until well combined.
Step 3
In a separate bowl, whisk together the 2 mashed ripe bananas, 3 Tbsp of golden syrup, 125g of melted butter, and 1 egg. Mix until you have a smooth, luscious batter. The natural sweetness of the bananas will really shine through here.
Step 4
Pour the wet banana mixture into the bowl with the dry ingredients. Gently mix everything together until just combined. Now, stir in about two-thirds of your chopped nuts and two-thirds of your dried fruits. Transfer the mixture into your prepared ovenproof tin or baking tray, spreading it out evenly.
Step 5
Sprinkle the remaining nuts and dried fruits over the top of the flapjack mixture. Place the tray into your preheated oven at 160°C (320°F) and bake for 20-25 minutes. It’s a good idea to check around the 20-minute mark. Insert a skewer into the center; if it comes out clean, they’re done. If you like a deeper golden-brown color, like I do, you can bake for an extra 5 minutes.
Step 6
Once baked, carefully remove the flapjack from the oven and let it cool completely in the tin before cutting. Once cooled, slice into 8-12 portions. These delicious homemade flapjacks can be stored in an airtight container in the refrigerator for up to a week. Enjoy this delightful and energizing treat!
