How to Make Sweet and Refreshing Pear Radish Kimchi

Essential Ingredients- 2 large, ripe pears
- 3 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Saeujeot (fermented salted shrimp), finely minced
- 1 Tbsp Fish Sauce (anchovy or sand lance)
- 1 Tbsp freshly minced garlic
- A small bunch of green onions, thinly sliced
Cooking Instructions
Step 1
Prepare all ingredients for your delicious pear kimchi. Wash the pears, peel them, and thinly slice the green onions.
Step 2
Cut the prepared pears in half and carefully remove the core, where the sweetness is concentrated. Then, cut them into bite-sized cubes, about 2cm each. Cutting them too small might reduce the satisfying crunch.

Add 3 tablespoons of Gochugaru to the cubed pears. Gently mix to coat the pears evenly with the chili flakes, being careful not to break them apart. Ensure the flakes distribute uniformly.

Now it’s time to add the seasonings that will enhance the umami flavor. Add 1 tablespoon of finely minced Saeujeot, 1 tablespoon of fish sauce, and 1 tablespoon of fresh minced garlic. Gently mix again, making sure not to mash the pear pieces, so all the seasonings are well incorporated.

Finally, add the thinly sliced green onions for extra crunch and a fresh aroma, and mix lightly. If you prefer, you can also add thinly sliced regular scallions. Mix only briefly, as overmixing can cause the pears to release too much juice.
