Main Ingredients

  • 1 bag of bean sprouts (approx. 150-200g)
  • 50g dried pollack or dried yellow pollack strips
  • 1 stalk of green onion
  • 2 Korean green chili peppers (optional)

Seasoning

  • 1/2 Tbsp soy sauce or salt (adjust to taste)
  • A pinch of red pepper flakes (optional)

Cooking Instructions

Step 1

Rinse one bag (small size) of bean sprouts thoroughly. Place them in a pot and add just enough water to barely cover the sprouts. Cover the pot with a lid and bring to a boil. This helps prevent a fishy smell and keeps the sprouts crisp.

Step 1

Step 2

Briefly soak 50g of dried pollack or dried yellow pollack strips in cold water to soften them. Once softened, cut them into bite-sized pieces (about 2-3 cm). Be careful not to soak them for too long, as this can make the broth cloudy.

Step 2

Step 3

Finely chop one stalk of green onion, including the white and green parts. Mince the two Korean green chili peppers after removing the seeds. If making this for children, you can omit the chili peppers or serve them separately for adults to add to their bowls.

Step 3

Step 4

Once the bean sprouts are boiling vigorously, resist the urge to open the lid immediately. Wait for just one more minute. This step is crucial for eliminating any potential fishy odor and enhancing the refreshing flavor of the soup.

Step 4

Step 5

After one minute, open the lid and add the prepared dried pollack strips. Season the soup with 1/2 tablespoon of soy sauce or salt. It’s best to start with less seasoning and adjust to your taste by tasting. The umami from the pollack will enrich the broth.

Step 5

Step 6

Continue to simmer for about 3 minutes after adding the pollack. Once the flavors have melded, add the chopped green onion and minced chili peppers, and bring to a gentle boil again.

Step 6

Step 7

Simmer for another 1-2 minutes, and your refreshing and spicy Dried Pollack and Bean Sprout Soup is ready! For an extra kick, sprinkle a little red pepper flakes on top according to your preference. Enjoy a truly revitalizing hangover cure with this warm soup!
