Braising Sauce

  • 4 Tbsp Soy Sauce
  • 2 Tbsp Mirin (Rice Wine)
  • 3 Tbsp Corn Syrup (or Oligosaccharide)
  • 1/2 Tbsp Sugar
  • 1 Cup Water (approx. 200ml)

Take 8 eggs out of the refrigerator and let them sit at room temperature for about 10 minutes. This helps prevent cracking during boiling and ensures even cooking.

Fill a pot with plenty of water and bring it to a rolling boil. Carefully place the eggs into the boiling water using a ladle. Adding a few drops of vinegar to the water makes peeling the shells much easier. Boil the eggs for 8 minutes. Once boiled, immediately transfer them to cold water to cool down, then gently peel off the shells.

In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp mirin, 3 Tbsp corn syrup (or oligosaccharide), and 1/2 Tbsp sugar. Stir well with a spoon to create the delicious braising sauce.

Arrange the peeled hard-boiled eggs at the bottom of a pot. Pour the prepared soy sauce mixture evenly over the eggs. Add 1 cup of water (about 200ml, using a paper cup as a measure).

Add 3 bay leaves to the pot for a fragrant aroma. Bring to a boil over medium-high heat and simmer for 5 minutes. During simmering, ladle some of the soy sauce mixture over the eggs occasionally. This helps the eggs absorb the flavor and develop a beautiful color and sheen.

Remove the pot from the heat after simmering for 5 minutes. Let the soy-braised eggs cool down slightly before cutting. Cutting or halving them when completely cooled will prevent them from breaking and maintain their shape beautifully. You can also serve them whole.
