Hello everyone! Food is fuel. When you think of Germany, beer and sausages probably come to mind first, right? Germany is one of the largest consumers of pork, and you can easily find sausage dishes everywhere you go. German sausages are called ‘Wurst’, and there are many types based on their preparation rather than regional specialties. Today, we’ll be making Currywurst! 🌭 This iconic German dish features crispy on the outside, juicy on the inside sausages, smothered in a savory and slightly sweet curry sauce. It’s a delightful snack that perfectly complements a cold beer. We’ll also be preparing some crispy french fries and fresh broccoli for a complete and satisfying meal! 😋

Before you begin cooking, gather all your ingredients. Place the bratwurst sausages, frozen fries, finely chopped onion, water, rosemary, and all the ingredients for the curry sauce neatly on your counter.

Let’s prepare the star of our dish: the bratwurst sausages! You can easily find these at your local supermarket or online. (I’m using some bratwurst sausages I received as a gift!) Make 2-3 shallow cuts across the surface of each sausage. This helps prevent them from bursting while cooking and allows the sauce to penetrate better for enhanced flavor.

Now, let’s fry the frozen fries to a perfect crisp! Pour enough cooking oil into a pan to generously cover the fries and heat it over medium heat. Once the oil is hot enough, carefully add the frozen fries. Fry them until they are golden brown and feel firm when poked with chopsticks. Stir occasionally to ensure even cooking and prevent sticking.

Sprinkle a pinch of salt over the freshly fried, hot fries. This simple seasoning elevates their flavor beautifully.

Time to make the curry sauce! In a bowl, combine 3 Tbsp ketchup, 1 Tbsp curry powder, 1 Tbsp tonkatsu sauce, 1/3 Tbsp mustard, and 1 Tbsp oligosaccharide. Whisk everything together with a fork or spoon until smooth and well combined. This blend of sauces will create a rich and complex flavor profile.

Next, we’ll cook the sausages. You can use a lightly oiled pan or even a non-stick pan. Cook the sausages over medium-low heat, turning them occasionally, until they are nicely browned on all sides. A slight charring adds a wonderful depth of flavor.

Let’s create the base for our curry sauce. After removing the sausages, you can wipe the pan clean or use a fresh one with a tiny bit of oil. Add the finely chopped onion and sauté over medium-low heat until it becomes translucent and lightly golden. Caramelizing the onions brings out their natural sweetness. Once the onions are cooked, pour in 100ml (about 1/2 cup) of water, add the prepared curry sauce mixture, and a few rosemary leaves for aromatic depth. (Rosemary can be found at larger supermarkets.)

Bring the sauce to a simmer over low heat, stirring constantly, until it thickens and the flavors meld together beautifully. Your delicious curry sauce is now ready!

Prepare the fresh broccoli by cutting it into bite-sized florets. Blanch the broccoli in boiling water with a pinch of salt for about 40 seconds – be careful not to overcook it, as it should remain slightly crisp. Immediately rinse under cold water to preserve its vibrant green color and drain well.

And now, for the grand finale! Arrange all the components on a serving plate for a visually appealing presentation. We’ve also set aside 2 Tbsp of tomato ketchup for dipping the crispy fries.
