Quick and Easy Scallion Kimchi

Leeks can be hard to find, so why not try this delightful scallion kimchi? I’ve adapted a recipe, using my own seasoning blend based on a method inspired by Chef Sumi. It’s an absolutely fantastic pairing with grilled meats and offers a wonderful burst of flavor!

Seasoning Ingredients

  • 1 Tbsp Fish Sauce (Kkanari)
  • 1/2 Tbsp Tuna Fish Sauce
  • 1/2 Tbsp Plum Extract
  • 1 Tbsp Minced Garlic
  • A pinch of Minced Ginger
  • 1 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Start by preparing 2 fresh scallions. After washing them, they weighed approximately 170g. Trim off the root ends and wash them thoroughly under cold running water.

Now, it’s time to cut the scallions into bite-sized pieces. If you plan to eat it immediately, cutting them into thin strips like ‘pajori’ (scallion salad) is a great option. However, since I’m preparing it for dinner tonight, I’ve opted for a finer chop. Look at that volume after chopping!

Add 1 tablespoon of Kkanari fish sauce to the chopped scallions and gently mix them together. Let them sit for about 10 minutes to allow the scallions to soften and absorb the seasoning.

After 10 minutes, incorporate 1/2 tablespoon of tuna fish sauce and 1/2 tablespoon of plum extract to add depth of flavor and a touch of sweetness. Feel free to adjust the amount of fish sauce to your personal preference.

Next, add a pinch of minced ginger for a fragrant aroma and 1 tablespoon of minced garlic to enhance the overall flavor profile. Be mindful not to add too much ginger, as its strong flavor can be overpowering.

Now for the star ingredient: gochugaru (Korean chili flakes). I’ve added a generous tablespoon for a vibrant color and a pleasant spicy kick. If you enjoy a spicier dish, feel free to increase the amount.

Finally, add 1 tablespoon of toasted sesame seeds for a nutty and aromatic finish. For an even more intense sesame flavor, you can lightly crush the seeds before adding them.

Now, thoroughly mix all the prepared seasoning ingredients with the scallions. Gently massaging the mixture with your hands ensures that the seasoning is evenly distributed and coats every piece of scallion.

Voila! Your delicious scallion kimchi is ready. The crisp texture of the scallions combined with the spicy and sweet seasoning creates an exquisite taste.
