This hearty fried rice is made even more savory and satisfying with a special sauce crafted from abalone liver. It’s a delicious and filling meal.
Main Ingredients- 1 Egg
- 1 bowl of Cooked Rice (approx. 200g)
- 1/4 cup finely diced Carrot
- 1/4 cup finely diced Onion
- 1/4 cup finely diced Zucchini
- 1 Tbsp minced Garlic
- 2 Abalones
- 1 handful chopped Green Onion
Flavor Enhancers- 1 Tbsp Mirin (cooking wine)
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1 knob of Butter (approx. 10g)

Cooking Instructions
Step 1
In a bowl, crack 1 egg and whisk it gently until smooth. You can remove the chalaza (the white stringy bits) if you prefer, but it’s not strictly necessary.
Step 2
Heat about 1-2 tablespoons of cooking oil in a pan over medium heat. Pour in the whisked egg and let it cook until about 80% set. Then, use a spatula to gently break and scramble the egg into bite-sized pieces, creating a scrambled egg texture.
Step 3
Add 1 bowl of cooked rice to the pan with the scrambled eggs. Use a spatula to gently mix the rice and eggs, ensuring they are evenly distributed and not clumpy. Coating each grain of rice with egg is key.
Step 4
Once the rice and eggs are well combined, transfer the mixture to a separate bowl. This prevents the rice from sticking to the pan in the next step and creates space for stir-frying the vegetables.
Step 5
Finely dice the carrot, onion, and zucchini. Make sure they are cut into small, uniform pieces for even cooking. Add 1 tablespoon of minced garlic to the diced vegetables.

Finely chop the green onion for added aroma. Prepare the abalones by cleaning them thoroughly and then dicing them into small, bite-sized pieces. Set the abalone innards aside separately.

In a clean pan, heat about 1-2 tablespoons of cooking oil over medium heat. Add the diced carrots, onions, and zucchini and stir-fry until they become slightly translucent. Lower the heat, then add the reserved abalone innards. Drizzle in 1 tablespoon of mirin, 1/2 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Stir well to combine and cook until the innards are incorporated into a flavorful sauce. Be careful not to burn the innards.
Step 8
Add the diced abalone to the pan with the sauce. Increase the heat to high and stir-fry quickly for 1-2 minutes until the abalone is cooked through and its flavor melds with the sauce.
Step 9
Finally, add the chopped green onions to the pan and stir-fry for another minute until fragrant. This will infuse the fried rice with a fresh, aromatic element.
Step 10
Return the egg and rice mixture to the pan. Add 1 knob of butter. Stir gently as the butter melts, coating the rice and other ingredients with its rich flavor. Continue to stir-fry until everything is well combined and heated through. Your delicious abalone liver fried rice is now ready to serve!
