  • Pork 400g (Pork shoulder or leg cut for stew recommended)
  • Onion 1/2

Seasoning & Additional Ingredients

  • Minced garlic 1 Tbsp (or 1 clove garlic, minced)
  • Fresh ginger 1 slice (minced)
  • Mirin or cooking wine 1 Tbsp
  • Soy sauce 2 Tbsp
  • Sesame oil 1 Tbsp
  • Kiwi jam 2 Tbsp (or 1.5 Tbsp sugar or corn syrup if unavailable)
  • Black pepper to taste
  • Sesame seeds to taste

Cooking Instructions

First, gently rinse the pork under running water. If using pork cut for stew, cut it into bite-sized pieces with scissors. If the fat needs to be separated from the meat, do so now. (Tip: You can also cook it as a whole piece and slice it later.)

Finely mince the garlic and thinly slice and then mince the fresh ginger. Prepare the half onion by finely chopping 1/4 of it and thinly slicing the remaining 1/4.

In a bowl, combine the minced garlic, minced ginger, 1 Tbsp mirin, 2 Tbsp soy sauce, 2 Tbsp kiwi jam, and 1 Tbsp sesame oil. Whisk thoroughly until the seasoning mixture is smooth and well combined.

Add the prepared pork to the seasoning mixture and toss to coat evenly. Let it marinate for 20-30 minutes. If you don’t have kiwi jam, you can substitute it with sugar or corn syrup, adjusting the sweetness as needed. (Tip: Kiwi contains enzymes that help tenderize meat.)

Heat a pan over medium-high heat and add the marinated pork. Stir-fry quickly, constantly mixing with a spatula to ensure even cooking and prevent burning, until the surface of the pork is browned.

Once the pork is browned, reduce the heat to medium. Add the sliced onions to the pan and stir-fry them with the pork for a short while. Cook until the onions become translucent and slightly softened, then turn off the heat.
