Ingredients

  • Pollack Roe (to taste)
  • 1 handful fresh chives
  • 1-2 Cheongyang peppers (for extra spiciness)
  • 1/4 onion
  • Assorted nuts (Brazil nuts, cashews, hemp seeds, etc., as preferred)
  • A pinch of toasted sesame seeds
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp perilla oil

Cooking Instructions

Step 1

First, let’s prepare the main ingredient: pollack roe. The saltiness can vary between brands, so taste it and adjust the amount accordingly. While it’s delicious on its own, today we’re making it even better – more palatable and packed with nutrition!

Step 1

Step 2

Now, it’s time to prepare the vegetables. Wash the chives thoroughly and chop them into 3-4 cm lengths. Finely mince the Cheongyang peppers if you like it extra spicy. Slice the onion thinly, then soak it in cold water for about 5 minutes to remove its pungent bite. This step makes the onion much milder and sweeter.

Step 2

Step 3

In a bowl, place the prepared pollack roe. Add the chopped chives and minced Cheongyang peppers. Squeeze out any excess water from the onion slices before adding them. Mix in the ground toasted sesame seeds and hemp seeds for extra nuttiness. You can also finely chop or crush your preferred nuts like Brazil nuts or cashews for added texture and flavor.

Step 3

Step 4

Gently mix all the ingredients together until well combined. Here’s a key tip: don’t add the sesame oil just yet! Adding it too early can dilute the flavor of the roe and the aroma might dissipate.

Step 4

Step 5

After mixing everything beautifully, let it sit for a moment. Just before serving, drizzle in the sesame oil and perilla oil. This way, you preserve the original flavors of the ingredients while maximizing the rich, nutty aroma of the oils. It’s perfect served over rice or alongside fresh greens!
