  • 1 Red chili pepper
  • 2 Eggs

Seasoning & Other Ingredients

  • 1.5 Tbsp All-purpose flour or pancake mix
  • 1.5 Tbsp Salt
  • 4-5 Tbsp Sunflower oil

Cooking Instructions

First, thoroughly wash the zucchini under running water. Then, slice it into rounds about 0.5 to 0.6 cm thick. Slicing them to a moderate thickness will help prevent them from falling apart when cooked.

Sprinkle 1.5 Tbsp of salt evenly over the sliced zucchini and let it sit for about 5 minutes to lightly salt. This step seasons the zucchini and helps it maintain its shape without becoming mushy when fried. After salting, rinse the zucchini lightly under water and drain them thoroughly on a colander.

Place the drained zucchini slices into a zip-top bag. Add 1.5 Tbsp of all-purpose flour (or pancake mix) and shake the bag well to coat each slice evenly with the flour. In a separate bowl, crack the 2 eggs and whisk them well to create an egg wash.

Finely slice the red chili pepper, removing the stem and seeds if desired, into thin rings. These will add a pop of color to your pancakes.

Heat about 4-5 Tbsp of sunflower oil in a pan over medium-low heat. Dip each floured zucchini slice into the whisked egg, ensuring it’s well-coated, and place it onto the hot pan. Arrange a slice of the red chili pepper on top of each zucchini slice. Fry until golden brown on both sides, flipping gently. It’s important to maintain medium-low heat to prevent burning.

Zucchini pancakes are best when they retain a vibrant green color. Avoid overcooking, as they can become soggy. Turn off the heat once they are lightly golden brown; residual heat will finish the cooking. They disappear so quickly, you might want to make an extra batch – my kids love them!
