Main Ingredients

  • 2 Morning Buns
  • 4 Eggs
  • 1/2 Cucumber
  • 1/2 Onion
  • 3 Imitation Crab Sticks (Kani Kamaboko)
  • 120g Ham (Spam or similar)

Sandwich Filling

  • 4 Tbsp Mayonnaise
  • 2 Tbsp Mustard Sauce

Cooking Instructions

Step 1

First, boil 4 eggs until hard-cooked. Once cooked, cool them in cold water briefly before peeling. Separate the yolks and whites. Mash the yolks very finely with a fork or a masher. The rich flavor of the mashed yolks will make the sandwich filling even more delicious.

Step 1

Step 2

Finely chop the boiled egg whites with a knife. Avoid chopping them too finely; slightly coarser pieces will add a pleasant texture to the sandwich.

Step 2

Step 3

Prepare 3 imitation crab sticks. Split each stick into two lengthwise, then gently shred them along the grain. Shredding them this way helps maintain their texture and allows them to blend well with other ingredients.

Step 3

Step 4

Peel, wash, and finely mince 1/2 onion. Finely minced onion not only mixes well with the other filling ingredients but also adds a touch of sweetness and a crisp bite, enhancing the overall flavor of the sandwich.

Step 4

Step 5

Finely chop 120g of ham (like Spam). When chopping the ham, aim for a texture that is not too fine, so you can fully enjoy the ham’s flavor with each bite.

Step 5

Step 6

Wash 1/2 cucumber, trim the ends, and optionally scoop out the seeds. Then, finely mince the cucumber. Removing the seeds can help reduce excess moisture, preventing the sandwich filling from becoming watery.

Step 6

Step 7

In a large bowl, combine the mashed egg yolks, chopped egg whites, shredded imitation crab, minced onion, minced ham, and minced cucumber. Add 4 tablespoons of mayonnaise and 2 tablespoons of mustard sauce. Gently mix everything together until well combined. Feel free to adjust the amount of sauce to your preference.

Step 7

Step 8

Prepare 2 morning buns. Using a bread knife or a regular knife, carefully cut a deep slit into the center of each morning bun, being careful not to cut all the way through. This creates a pocket to fill. Generously spoon the prepared sandwich filling into the slit of each morning bun to create your delicious morning bun egg sandwich!
