Hot Pot Ingredients- 8 dumplings of your choice (e.g., a mix of large and regular)
- 5 leaves of napa cabbage
- 100g thinly sliced beef bulgogi
- 1 king oyster mushroom
- 1 enoki mushroom (base trimmed and rinsed)
- 1/2 red chili pepper
- 1 green chili pepper
- 1/3 of a large green onion
Beef Marinade- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp fish sauce (anchovy sauce)
- Pinch of black pepper
Broth- 5 cups water
- 2 Tbsp Korean soup base (Yeon-du) or 5 cups anchovy-kelp broth
- Salt (to taste)
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp fish sauce (anchovy sauce)
- Pinch of black pepper

Begin by preparing your vegetables for the hot pot. Cut the napa cabbage into 3-4 large pieces. Slice the king oyster mushroom into bite-sized pieces. Trim the base of the enoki mushrooms, rinse them under running water, and gently shake off excess water. Slice the green onion, red chili pepper, and green chili pepper diagonally. Feel free to add your favorite types of mushrooms or substitute the napa cabbage with crisp bok choy. I’ve prepared a mix of large and regular dumplings for a variety of flavors.

Next, let’s marinate the beef. In a bowl, place the thinly sliced beef bulgogi. Add 1 tablespoon of minced garlic, 1 tablespoon of cooking wine, 1 tablespoon of fish sauce, and a pinch of black pepper. Gently mix everything together with your hands, ensuring the marinade evenly coats the beef.
