Main Ingredients

  • 1 basket of Perilla leaves (washed and prepared)
  • 5 Perilla leaves (stems removed, prepared)
  • 1/3 Onion (thinly sliced into matchsticks)
  • 1 Mini bell pepper (seeds removed, thinly sliced into matchsticks)

Seasoning Ingredients

  • 1 Tbsp Gochugaru (Korean chili powder)
  • 3 tsp Salt
  • 0.5 Tbsp Fish sauce
  • 1 Tbsp Plum extract (Maesilcheong)
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

First, prepare all the fresh vegetables for today’s dish. Make sure to drain them well after washing.

Step 1

Step 2

The star of the dish, perilla leaves, need careful preparation. Trim off any tough stems, keeping only the soft, aromatic leaves. Wash them thoroughly under running water and gently shake off excess moisture.

Step 2

Step 3

Remove the stems from the perilla leaves and slice them into bite-sized pieces. Thinly slice the onion into matchsticks. For the mini bell pepper, cut it in half, remove the seeds, and then slice it thinly, similar to the onion. The colorful pepper will make the salad look more appealing.

Step 3

Step 4

In a large bowl, combine the prepared perilla leaves, perilla, sliced bell pepper, and onion. Gently toss them to mix without crushing the vegetables, preparing them to be evenly coated with the dressing.

Step 4

Step 5

Now it’s time to add the seasoning ingredients to create the salad’s flavor. Add 1 Tbsp of gochugaru, 3 tsp of salt, 0.5 Tbsp of fish sauce, 1 Tbsp of sweet plum extract, 1 Tbsp of nutty sesame oil, and finally, 1 Tbsp of toasted sesame seeds to the bowl.

Step 5

Step 6

Many people ask if adding garlic is okay. For this perilla leaf salad, the aroma of the perilla and perilla leaves themselves is very unique and strong, so I personally recommend omitting minced garlic. Garlic flavor can sometimes overpower the natural scent of the vegetables. However, if you prefer, you can try adding a very small amount.

Step 6

Step 7

Once all ingredients and seasonings are in the bowl, gently toss everything together. Avoid overmixing to preserve the fresh, crisp texture of the vegetables. Mix just enough so that the dressing evenly coats the ingredients. This will result in a crunchy and fragrant Perilla Leaf Salad! It’s best enjoyed immediately.
