  • 15g Rice Flour
  • 300g Water

First, prepare the fresh leaf parts of the bok choy. Wash them thoroughly under running water several times to remove any dirt or debris. Set aside for use.

Blanch the prepared bok choy leaves in boiling water for about 30 seconds to 1 minute. This helps to retain their crisp texture, remove any raw taste, and maintain their vibrant green color.

Combine the blanched bok choy and 100g of water in a blender or food processor. Blend until very smooth, creating a fine puree. Ensure there are no lumps. This step extracts the flavor and nutrients from the bok choy.

In a separate bowl, mix the 15g of rice flour with 200g of cold water. Whisk thoroughly until the rice flour is completely dissolved and there are no clumps. Then, add the blended bok choy puree to this mixture and gently stir to combine everything evenly.

Pour the mixture into a saucepan and begin to cook over medium-low heat. Stir continuously with a spatula to prevent sticking to the bottom and to ensure a smooth consistency. For an extra smooth texture, strain the porridge through a fine-mesh sieve.
