Jinmichae, my favorite side dish from childhood! This irresistible stir-fry boasts a perfect balance of savory, spicy, and sweet flavors that will make you devour bowl after bowl of rice. It’s a simple yet incredibly tasty classic.

Main Ingredients

  • Dried shredded squid (Jinmichae) 150g (Cut into bite-sized pieces)

Seasoning

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 1.5 Tbsp
  • Soy sauce 1 Tbsp
  • Perilla oil 0.5 Tbsp
  • Cooking oil 0.5 Tbsp
  • Minced garlic 0.5 Tbsp
  • Oligosaccharide 1.5 Tbsp
  • Sugar 0.5 Tbsp
  • Black pepper a pinch
  • Water 2 Tbsp
  • Mayonnaise 1.5 Tbsp

Cooking Instructions

Step 1

Prepare the Jinmichae by cutting it into bite-sized pieces, about 5-7 cm long. Gently rinse the dried shredded squid under running water to remove any dust or impurities. Avoid rinsing for too long, as this can wash away the flavor.

After rinsing, squeeze out as much water as possible with your hands. Then, place the Jinmichae in a colander and let it drain for about 20 minutes to remove any remaining moisture. Draining thoroughly helps the seasoning cling better, making it more delicious.

Now, let’s make the flavorful sauce! In a heated pan, combine gochujang (2 Tbsp), gochugaru (1.5 Tbsp), soy sauce (1 Tbsp), perilla oil (0.5 Tbsp), cooking oil (0.5 Tbsp), minced garlic (0.5 Tbsp), oligosaccharide (1.5 Tbsp), sugar (0.5 Tbsp), a pinch of black pepper, and water (2 Tbsp). (We’ll add the mayonnaise at the end!).

Turn the heat to medium and stir the sauce ingredients in the pan with a spatula until well combined. It’s important to ensure the sauce is smooth and evenly blended without any clumps.

Once the sauce is well combined and starts to simmer, add the mayonnaise (1.5 Tbsp) for added creaminess and richness. Stir quickly to incorporate it. Be careful not to overcook after adding mayonnaise, as it can sometimes separate.
