Main Ingredients

  • 1.6kg Pork ribs
  • 1 Onion
  • 1 King oyster mushroom
  • 1 Red chili pepper
  • 2 Serrano chili peppers
  • 1 Green onion stalk
  • 1/4 Carrot

Sauce Ingredients

  • 1 cup Chopped green onion
  • 2 Tbsp Minced garlic
  • 1/2 cup Soy sauce (approx. 100ml)
  • 1/3 cup Brown sugar (approx. 70g)
  • 1/3 cup Mirin or cooking sake (approx. 70ml)
  • 2/3 cup Water (approx. 130ml)
  • 3 Tbsp Sesame oil
  • Pinch of black pepper

Cooking Instructions

Soak the 1.6kg of pork ribs in cold water for at least 6 hours, or preferably overnight, to remove all the blood. Removing the blood is crucial for a clean flavor and to eliminate any gamey smell.

After draining the ribs, bring a pot of water to a boil. Add 3 tablespoons of soju (or cooking wine) to the boiling water and blanch the ribs for 5 minutes. This step helps to further remove impurities and any remaining odor. Drain the ribs and rinse them thoroughly under cold running water.

Prepare the vegetables. Slice the onion thickly. Cut the king oyster mushroom into bite-sized pieces. Slice the red chili and serrano peppers diagonally. Chop the green onion into large pieces. Cut the carrot into chunky pieces. (You can adjust the amount of serrano peppers for more heat).

In a large bowl, combine all the sauce ingredients and mix well. Add 1 cup of chopped green onion, 2 tablespoons of minced garlic, 1/2 cup of soy sauce, 1/3 cup of brown sugar, 1/3 cup of mirin, 2/3 cup of water, 3 tablespoons of sesame oil, and a pinch of black pepper. Stir until everything is well combined to create the braising sauce. You can substitute brown sugar with corn syrup if desired.

In a heavy-bottomed pot, place the blanched pork ribs and pour in all the prepared sauce. Add 500ml of water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 30-40 minutes, stirring occasionally to prevent the sauce from sticking to the bottom. (Adjust the amount of water as needed during cooking).

Once the ribs have absorbed the sauce and are tender, add the sliced onion, carrot, and king oyster mushrooms to the pot. Continue to simmer over low heat for another 20 minutes, or until the vegetables are tender. After 20 minutes, turn off the heat. Add the diagonally sliced red chili, serrano peppers, and chopped green onion. Cover the pot and let it sit for about 5 minutes to allow the residual heat to cook the peppers and green onions. Your delicious braised pork ribs are now ready to serve! Enjoy them while they are hot!
