First, wash the perilla leaves thoroughly under running water. If the stems are too long, trim them slightly. However, don’t cut them too short, as you’ll need a little stem to hold the leaves when eating. After washing, drain the leaves well in a colander. Excess water can dilute the seasoning.

Now, let’s make the seasoning! In a small bowl, add 3 tablespoons of water. Then, add the finely chopped red chili pepper (if using) and green onion. Next, add 3 tablespoons of soy sauce, 1 tablespoon of plum extract, 1 tablespoon of red pepper flakes, 2 teaspoons of minced garlic, and 2 teaspoons of toasted sesame seeds.
