Spicy Tuna & Gochujang Stew: Homemade Chili Tuna

Ingredients

  • 1 can (150g) Tuna
  • 3-4 Tbsp Gochujang (Korean chili paste), adjust to taste
  • 2-3 Tbsp Dashi stock or water
  • 1/4 Carrot
  • 1/4 Bell pepper (use various colors for visual appeal)
  • 1/4 Onion
  • 1/2 King oyster mushroom
  • 1-2 Green chili peppers (use Cheongyang chili peppers for more heat)
  • 1 Tbsp Minced garlic
  • 1-2 Tbsp Brown rice oil or cooking oil
  • 1 Tbsp Perilla powder (optional, for added nutty flavor)

Cooking Instructions

Wash all vegetables (carrot, bell pepper, onion, king oyster mushroom, green chili peppers) and dice them into small, uniform cubes. Smaller pieces allow the sauce to penetrate better and make it easier to eat. The king oyster mushroom adds a pleasant chewy texture.

Heat 1-2 Tbsp of brown rice oil in a pan over medium heat. Add 1 Tbsp of minced garlic and stir-fry until fragrant, being careful not to burn it. Then, add all the diced vegetables and sauté until they soften slightly. The vegetables will release moisture, enhancing the flavor.

Once the vegetables are somewhat sautéed, pour in 2-3 Tbsp of dashi stock or water. Add 3-4 Tbsp of gochujang and stir well to dissolve it, ensuring there are no lumps. Let it simmer over medium-low heat until the liquid reduces and becomes a thick sauce. Taste and adjust the amount of gochujang if needed.

Drain about two-thirds of the oil from the canned tuna and add the tuna chunks to the simmering sauce. Stir to combine the tuna with the sauce and continue to cook until the sauce thickens and coats the ingredients well. Once the liquid has mostly evaporated and the ingredients are well-glazed, turn off the heat. Optionally, stir in 1 Tbsp of perilla powder for a nutty aroma. It’s delicious served immediately or can be cooled and stored in a container for later.
