Ingredients- 2 slices of bread
- 3 eggs
- 1 stalk of scallion (use both white and green parts)
- Pinch of salt
- 1/2 Tbsp mirin or cooking wine
- 1 Tbsp sugar
- Generous amount of butter (for greasing the pan)
- Parmesan cheese powder (to taste)
- Parsley flakes (for garnish, optional)
Cooking Instructions
Step 1
First, crack 3 eggs into a wide bowl. Add a pinch of salt, 1/2 tablespoon of mirin (or cooking wine), and 1 tablespoon of sugar. Whisk everything together thoroughly with a fork or whisk until well combined. It’s best to ensure the sugar is dissolved.

Wash the scallion thoroughly and finely chop it into small pieces, about 0.5 cm thick, using both the white and green parts. Using plenty of scallions will give the toast a wonderfully aromatic flavor. You can also use other types of scallions or green onions.

Add all the chopped scallions to the egg mixture and stir evenly with a spoon or spatula. Ensure the scallions are well dispersed within the egg batter. Letting it sit for a moment will allow the scallion flavor to infuse into the eggs more deeply.

Now, heat a pan over medium-low heat and melt a generous amount of butter. Be mindful of the heat to prevent the butter from burning. Tilt the pan to ensure the melted butter coats the entire surface evenly.
