Ingredients- 2 cups cooked soybean water (or soaked soybeans)
- 1 cup ground pork
- 2 Korean green chili peppers (cheongyang chili)
- 1/2 green onion
- 1/5 Tbsp salt
- 1/2 Tbsp minced garlic
- 1/2 cup pancake mix
- Cooking oil (generous amount)
- Soy sauce
- Vinegar
Cooking Instructions
Step 1
First, prepare the beans. Place 1 cup of dry beans and 1 cup of water in a microwave-safe bowl. Microwave for 5 minutes to cook the beans. (This step softens the beans, making them easier to blend later.)
Step 2
Transfer the microwaved beans to a pot. Add enough water to cover the beans (about 500ml) and boil for approximately 3 minutes. (This process helps reduce any ‘bean’ smell and further softens them.)
Step 3
Place the softened beans and the boiling water into a blender. Blend on high speed for about 1 minute until you achieve a smooth soybean water. The finer you blend, the smoother the resulting soybean water will be. (For an even smoother texture, you can strain the soybean water through a sieve.)
Step 4
Prepare the green onions and Korean green chili peppers to be used with the 2 cups of soybean water you’ve blended. Adjust the amount according to your preference. Make sure you have precisely 2 cups of soybean water.
Step 5
Finely chop the green onions and Korean green chili peppers. If you prefer a crunchier texture, you can chop them slightly coarser.
Step 6
In a large bowl, combine the ground pork, the blended soybean water, chopped green onions, chopped chili peppers, pancake mix, minced garlic, and salt. Mix well to create the batter. If the batter seems too wet, add a little more pancake mix.
Step 7
Heat a generous amount of cooking oil in a pan over medium-low heat. Spoon portions of the batter into the hot pan and cook until golden brown and crispy on both sides. Be mindful of the heat to prevent burning.
Step 8
As the pancakes are almost done cooking, prepare the dipping sauce. Mix soy sauce and vinegar in a 2:1 ratio (e.g., 2 Tbsp soy sauce to 1 Tbsp vinegar). For added flavor, you can stir in chopped chili peppers or sesame seeds.
