- 3 Tbsp Fish sauce (or soy sauce for soup)
- 1 Tbsp Sugar (adjust to taste)
- 2 Tbsp Vinegar
- 1 Tbsp Minced garlic
- 1/2 tsp Minced ginger (optional)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 2 Tbsp Chopped green onions (optional, for color and flavor)
Cooking Instructions
Step 1
First, prepare 500g of salted kelp strips. Nowadays, many products are available as salted kelp strips, pre-cut into long strands, making them convenient to cook.
Step 2
Gently rinse the kelp strips under running water. This is to remove the salt attached to the kelp’s surface. Be careful not to rub too hard, and repeat the rinsing process 2-3 times.
Step 3
After rinsing, soak the kelp strips in cold water for about 30 minutes to 1 hour to thoroughly remove the salt. The saltiness varies by product, so it’s important to taste and adjust the saltiness accordingly. Once the salt is removed, drain the kelp strips completely in a colander.
Step 4
Place the drained kelp strips in a bowl. Add 1 tablespoon of minced garlic, 1 tablespoon of sugar, 2 tablespoons of vinegar, and 3 tablespoons of fish sauce. (Adjust the amount of fish sauce based on its saltiness.)
Step 5
For an enhanced flavor, you can add 1/2 teaspoon of minced ginger and 2 tablespoons of chopped green onions as desired. (Minced ginger is optional.)
Step 6
Mix all the seasoning ingredients well. You can either knead gently with your hands or use a spatula to ensure the seasoning is evenly distributed throughout the kelp strips.
Step 7
Finally, drizzle with 1 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds to finish. The nutty aroma of sesame oil and the fragrance of sesame seeds will further enhance the taste.
