Ingredients

  • 2 bowls cooked rice
  • 1 small can Spam
  • 1 potato
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 onion
  • 1/3 zucchini
  • 1 Tbsp soy sauce or oyster sauce
  • Pinch of salt
  • Pinch of sesame seeds
  • 3 eggs

First, prepare the vegetables for the fried rice. Feel free to use any leftover vegetables you have in your refrigerator. Carrots, mushrooms, broccoli, or any other vegetables you have on hand will work wonderfully.

Rinse the Spam briefly under hot water to remove any impurities, then dice it into small, approximately 0.5cm cubes. Finely dice the potato, bell peppers, zucchini, and onion into similar-sized cubes. Preparing all ingredients to a uniform size ensures they cook evenly and the fried rice doesn’t become mushy.

Crack the 3 eggs into a bowl, remove the chalazae (the white stringy bits), and whisk them thoroughly with a fork or whisk. Lightly oil a heated pan over medium-low heat, then pour in the beaten eggs. Quickly scramble them using chopsticks or a wooden spoon until they form soft curds. Set aside in a separate dish to cool.

Use the same pan where you cooked the eggs. Heat the pan over medium heat and add the diced potato, bell peppers, zucchini, onion, and Spam. You don’t need to add extra oil, as the Spam will render enough fat to cook the ingredients. Stir-fry until the potatoes are slightly translucent and the vegetables have softened.
