Sweet Corn Rice Cooked in an Electric Pressure Cooker
Cooking Sweet Corn Rice Perfectly with an Electric Pressure Cooker
Enjoy the natural sweetness and delightful crunch of fresh sweet corn in a perfectly cooked rice dish using your electric pressure cooker. This recipe makes a flavorful and vibrant side dish that’s both healthy and delicious.
Ingredients- 3 servings of rice (approx. 2 cups)
- 1 fresh sweet corn
Cooking Instructions
Step 1
First, prepare the fresh sweet corn. Carefully cut the kernels off the cob using a knife, holding the corn upright. You can also use the cob itself for added flavor.
Step 2
Rinse the rice thoroughly and let it soak for about 30 minutes. Place the soaked rice into the inner pot of your electric pressure cooker. Add the fresh sweet corn kernels you just cut off.
Step 3
Add water for cooking the rice, using slightly less water than you normally would, as the corn will release some moisture. For an extra layer of corn flavor, place the removed corn cob (or pieces of it) into the pot with the rice and water. Select the ‘White Rice High Pressure’ setting on your electric pressure cooker and start cooking.
Step 4
Once the cooking cycle is complete, the pressure indicator will drop, signaling that the rice is ready. Carefully open the lid, allowing the steam to escape gently. Fluff the rice with a spatula to distribute the corn evenly.
Step 5
The finished sweet corn rice is a beautiful golden color, dotted with bright yellow kernels. The natural sweetness of the corn is evident just by looking at it, making it incredibly appetizing.
Step 6
One of the best things about this rice is that the sweet corn kernels retain a delightful crunch even after cooking. This combination of sweetness and crisp texture creates a unique and delicious twist on regular rice, perfect as a special side dish.
