- 2 Tbsp Maesilcheong (Plum extract)
- 1/2 Tbsp Jin Ganjang (Soy sauce)
- 1/2 Tbsp Apple cider vinegar
- 1/2 Tbsp Minced garlic
- 1 Tbsp Oligodang (Oligosaccharide syrup)
- 1 Tbsp Sesame oil
- 1 Tbsp Sesame seeds
Cooking Instructions
Step 1
First, prepare the vegetables for a refreshing crunch. Thinly slice the regular cabbage and red cabbage in an 8:2 ratio. For extra crispness, soak the shredded vegetables in ice-cold water for about 5 minutes. Afterwards, drain them thoroughly using a colander, ensuring no excess water remains.
Step 2
Wash the cucumber and slice it thinly. These will add a burst of freshness to your Bibim Mandu.
Step 3
Now, let’s make the special sauce that elevates this dish! In a bowl, combine 2 Tbsp Gochujang, 2 Tbsp Maesilcheong, 1/2 Tbsp Jin Ganjang, 1/2 Tbsp apple cider vinegar, 1/2 Tbsp minced garlic, 1 Tbsp Oligodang, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Whisk everything together until well combined and the sweetener is dissolved. This sauce offers a perfect balance of spicy, sweet, and tangy flavors.
Step 4
Get your main star ready: the triangle dumplings! You’ll need 10 of them for this recipe.
Step 5
These dumplings are distinctively shaped like triangles and are a celebrated delicacy in Daegu, much like their flat dumpling counterparts. Their unique form and taste promise a special culinary adventure.
Step 6
Heat a generous amount of cooking oil in a frying pan over medium heat. Add the triangle dumplings, being careful not to overcrowd the pan. Fry them gently; high heat can burn the outside before the inside cooks.
Step 7
Fry the dumplings until they are golden brown and crispy on all sides. Turning them occasionally ensures even cooking. Frying them ‘deep-fry style’ will yield an exceptionally crispy texture.
Step 8
Arrange the perfectly fried triangle dumplings around the edge of your serving plate, creating a circular pattern. This presentation makes the dish visually appealing, resembling a beautiful flower.
Step 9
In the center of the plate, pile a generous amount of the drained shredded cabbage and sliced cucumber. Then, crumble the 2 sheets of seasoned seaweed (gim) over the vegetables. The savory notes of the seaweed will add another layer of flavor.
Step 10
Finally, generously drizzle the prepared special Bibim sauce over the vegetables. Feel free to adjust the amount of sauce to your preference. Garnish with a sprinkle of sesame seeds. Your delicious, crispy Triangle Mandu Bibim is now ready to be enjoyed! Bon appétit!
