Ingredients

  • 1 serving of somyeon noodles (approx. 100g)
  • 1/2 zucchini (medium size)
  • 1/4 onion (medium size)

Cooking Instructions

Wash the zucchini thoroughly, trim off the ends, and julienne it into about 0.5cm thick strips. Peel the onion and julienne it similarly. Julienned vegetables absorb the sauce well and provide a pleasant texture.

Heat about 1 Tbsp of cooking oil in a pan over medium heat. Add the julienned zucchini and onion and stir-fry until they become slightly translucent. It’s best to keep the zucchini slightly crisp rather than overcooking it until mushy.

To the stir-fried zucchini and onion, add 2.5 Tbsp gochugaru, 2 Tbsp soy sauce, and 2 Tbsp oligo당. Reduce the heat to low and stir-fry for another 2 minutes, being careful not to burn the seasoning. Pre-stir-frying the sauce like this significantly deepens its savory flavor.

Bring a pot of water to a rolling boil over high heat. Once boiling, add 1 serving of somyeon noodles. Gently separate the noodles with chopsticks to prevent sticking, and cook for exactly 4 minutes. Cooking for precisely 4 minutes ensures a chewy texture.

After 4 minutes, immediately drain the noodles in a colander. Rinse them thoroughly under cold running water to remove excess starch. Rinsing with cold water makes the noodles springy and prevents them from becoming soggy.

Transfer the cold-rinsed noodles to a serving bowl. Generously top with the stir-fried zucchini mixture. Finally, drizzle 1 Tbsp of sesame oil over the top for added nutty aroma, completing your delicious Zucchini Bibim Guksu. You can also sprinkle sesame seeds before mixing for extra flavor.
