Ingredients

  • 1 packet King Oyster Mushrooms (approx. 3-4 mushrooms)
  • 1 swirl cooking oil (approx. 1-2 Tbsp)
  • 0.5 Tbsp minced garlic
  • 3 Tbsp soy sauce
  • 2 Tbsp corn syrup (or honey/maple syrup)
  • 1 Tbsp sesame oil
  • 0.5 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare 1 packet (about 3-4 mushrooms) of fresh king oyster mushrooms.

Trim the base of the mushrooms and gently wipe off any dirt or debris with a paper towel. Wiping them clean instead of washing preserves their excellent texture.

Slice the mushrooms into uniform pieces, about 2 cm thick. Slicing them thickly will help maintain their chewy texture after cooking.

On one side of each mushroom slice, make a crosshatch pattern by scoring them with a knife or fork, about 2-3mm deep. Scoring helps the sauce penetrate better, enhancing the flavor, and creates a nice visual appeal as they cook. Be careful not to score too deeply, as this can cause the mushrooms to break apart.

Heat a pan over high heat and add about 1 swirl of cooking oil. Add all the prepared king oyster mushrooms.

Keep the heat on high and stir-fry the mushrooms as if you’re searing them. They will start to release moisture; continue to cook until all the liquid has evaporated and the mushrooms are lightly browned. This process brings out the mushrooms’ unique flavor.

Once the mushrooms are nicely browned, reduce the heat to medium. Add 0.5 Tbsp of minced garlic and stir-fry for about 30 seconds to 1 minute until a fragrant garlic aroma is released.

As the soy sauce starts to reduce and coat the mushrooms, add 2 Tbsp of corn syrup. Quickly toss everything together for a short stir-fry to combine. The corn syrup adds a glossy finish and a touch of sweetness.

Turn off the heat. Stir in 1 Tbsp of sesame oil and 0.5 Tbsp of toasted sesame seeds to finish. This combination creates a delightful aroma and nutty flavor.
